Chickpea Salad



  • 1 15-ounce can of chickpeas (drained and rinsed well)

  • 1/4 cup GoAvo®

  • 1 tablespoon mustard (stoneground or dijon)

  • 1/4 cup scallions, sliced

  • 1/2 cup celery, sliced

  • 1/2 cup carrots, diced

  • dash of garlic powder

  • 1/8 teaspoon cayenne pepper

  • sea salt & pepper to taste

  • toasted wheat bread or whole romaine lettuce leaf (optional)



Drain and rinse your chickpeas, place in medium size bowl and roughly mash with a fork or potato masher.  Add the remaining ingredients and combine.


Serve in romaine lettuce boats or over toasted wheat bread!  Enjoy!
