
Egg Salad
INGREDIENTS:

6 eggs

1/3 cup GoAvo®
-
1 small celery stalk (diced)
-
1 teaspoon mustard
-
1 tablespoon fresh chopped parsley

Salt and pepper to taste
DIRECTIONS:
Place eggs in a pot and fill with cold water. Bring the water to a boil. Take the pot off the heat and cover. Leave the eggs covered in the pot for 6 minutes. Remove the eggs from the pot and place in a bowl of ice water. Peel eggs.
Combine eggs, GoAvo®, celery, mustard, and parsley in a medium bowl. Smash and mix with a firm whisk. Season to taste with salt and pepper.
