Creamy Ginger Carrot Soup

This fall staple will warm you from head to toe!


  • 1 tablespoon extra-virgin olive oil

  • 1 cup diced yellow onion 

  • 4 cups (960ml) vegetable broth

  • 4 medium carrots, chopped

  • 2 tablespoons minced fresh ginger

  • 1 teaspoon sea salt

  • GoAvo to serve


  1. In a medium saucepan over medium heat, warm the olive oil, and sauté the onion for about 5 minutes until soft and translucent.

  2. Add the broth, carrots, ginger, and salt to the pan. Increase the heat to high, and bring the mixture to a boil. Once the mixture boils, reduce the heat to medium-low, and simmer for 15 to 20 minutes, or until the carrots are fork-tender.

  3. Transfer mixture to a blender, and process on high for 30 to 60 seconds, or until soup is a smooth consistency.

  4. Serve with a squeeze of GoAvo to make it extra creamy!
