This fall staple will warm you from head to toe!

Ingredients:
1 tablespoon extra-virgin olive oil
1 cup diced yellow onion
4 cups (960ml) vegetable broth
4 medium carrots, chopped
2 tablespoons minced fresh ginger
1 teaspoon sea salt
GoAvo to serve
Directions:
In a medium saucepan over medium heat, warm the olive oil, and sauté the onion for about 5 minutes until soft and translucent.
Add the broth, carrots, ginger, and salt to the pan. Increase the heat to high, and bring the mixture to a boil. Once the mixture boils, reduce the heat to medium-low, and simmer for 15 to 20 minutes, or until the carrots are fork-tender.
Transfer mixture to a blender, and process on high for 30 to 60 seconds, or until soup is a smooth consistency.
Serve with a squeeze of GoAvo to make it extra creamy!
