Tomato & Cucumber Salad


INGREDIENTS:

  • 4 medium tomatoes (cut into chunks)

  • 1 large cucumber

  • 1/2 Vidalia onion (thinly sliced)

  • 1/2 cup of crumbled feta cheese

  • 1/3 cup GoAvo®

  • 2 tablespoons red wine vinegar

  • 1 tablespoon fresh parsley

  • 1/2 tablespoon tarragon

  • Salt and pepper to taste

 

DIRECTIONS:

In a large bowl, toss together tomatoes, cucumber, onion, GoAvo®, vinegar, parsley, and tarragon.  Season to taste with salt and pepper.  Top with feta cheese.
